This quick and easy Fruit Pizza Recipe has a tender cookie base with a creamy cheese frosting and assorted fresh fruits on top.
Sugar cookie fruit pizza is a show-stopper at parties and potlucks. Everyone always loves it and there’s never any left!
Whether you’re chilling at home, heading to a friend’s house or planning a baby shower, this adorable Fruit Pizza is the perfect, easy treat to make.
My favorite part about this sugar cookie fruit pizza is the soft and tender cookie crust. It’s enhanced with a touch of almond extract which really brings something special to the cookie. The soft cookie crust combined with the lightly sweetened cream cheese frosting and fresh fruit make for one irresistible treat.
How To Make Sugar Cookie Fruit Pizza Crust
The base for a fruit pizza is a soft and tender sugar cookie. It’s quite simple to mix up with your classic sifting of dry ingredients and combining the wet ingredients together.
- DRY INGREDIENTS: Sift together the dry ingredients in a large bowl.
- MIX WET INGREDIENTS: Use a hand mixer or stand mixer to cream together sugar and butter until light and fluffy. Add in one egg, vanilla extract and almond extract.
- COMBINE: Add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms. Press into a 12″ pizza pan.
- BAKE: Bake the sugar cookie pizza dough for just 11 to 13 minutes until set.
- COOL: Let the sugar cookie crust cool completely before icing.
Frosting For Fruit Pizza
The frosting for this fruit pizza is super simple. It’s a cream cheese based frosting that’s lightly sweetened with sugar and vanilla extract.
- 8 oz. Cream Cheese
- 1/3 cup Sugar
- 1/2 tsp. Vanilla Extract
Beat the frosting ingredients together in a mixing bowl until smooth and creamy.
You’ll want to make sure that your sugar cookie crust is cooled before spreading the frosting all over.
Best Fruits For Sugar Cookie Pizza
The best types of fruits to use with a fruit pizza are going to be fresh and in season. I’m using Kiwi, Strawberries, Blueberries and Mandarin Oranges.
Here are more fruit ideas for you to use:
- Mango
- Peaches
- Pineapple
- Grapes
- Raspberries
- Blackberries
NOTE: I’m using canned mandarin oranges on my pizza. I’ve drained them and laid them out on a paper towel to remove as much moisture as possible before adding them to the fruit pizza.
It can seem a bit intimidating to have to slice and prepare all the fruits for a fruit pizza, but it’s really not that much. While the cookie was baking and cooling I went ahead and sliced my strawberries and kiwis so I was ready to decorate once the cookie was cooled and frosted.
Tips and Tools For Success-
It’s super easy to make this fruit pizza recipe, but here are some tips and tricks, along with my favorite tools to make sure you get rave reviews every time.
- You can make the fruit pizza ahead of time, just don’t place the fruits on top of the frosting until the day you’re going to serve it.
- FRUIT PIZZA GLAZE: To give your fruit a little extra shine, stir together 1 tsp honey with 1/2 tsp water and brush over the fruit.
- Arrange the fruit in any pattern you like. I find it easiest to start from the outside edge and work my way in.
- Since this pizza has a cream cheese based frosting, once frosted, keep it covered and stored in the fridge.
Pizza Pan – For obvious reasons, you’re going to want to use a pizza pan that does NOT have any holes in the bottom of it. I picked up a 12″ pizza pan at Walmart for $1.48, but here is another great option on Amazon.
Frosting Spatula – Whenever it comes to frosting cakes (or cookies), I always reach for my offset spatula. It makes it super easy to get a smooth base, and it’s just a great tool to have in your kitchen.
Pastry Brush –If you want to give that fruit a nice glossy shine with the fruit glaze, you’ll need a simple pastry brush to paint it on. I love these silicone ones because they’re super easy to clean and also great at high heats (for brushing sauces on meats on the bbq).
